Ingredients
- 60 g low-carb flour
- 1 tbsp olive oil
- 100 ml water (approx)
- ¼ tsp xantham gum
- ½ tsp bicarbonate of soda
- 1 tsp lemon juice
Instructions
- Add the flour and bicarbonate of soda to a bowl and mix it all together.
- Sprinkle on the xanthan gum and continue mixing.
- Add the olive oil and lemon juice.
- Add ¾ of the water and mix to bring the mixture together.
- Continue to add the rest of the water until it comes together to form a ball of soft dough.
- Knead for about a minute.
- Split the dough into 3 balls and roll out thinly between 2 sheets of greaseproof paper.
- For each wrap, put into a preheated frying pan and dry fry for about 2 minutes, then turn over and cook for a further minute.
- Allow to cool slightly on a cooling rack or, if using straight away, wrap in a tea towel to keep warm. Enjoy!
Notes
- To store the wraps for use at a later time, we recommend wrapping the wraps in clingfilm to maintain moisture.

Just made these for the first time, so easy and fast to make and makes a lovely wrap to fill.
Followed recipe exactly, but dough far too sticky and wet to handle or roll out and that was with half the water recommended, so didn’tadd the rest. Salt quantity not given in ingredients but mentioned in directions without any amount given. Not a workable recipe.

These made lovely wraps for fajitas. I found my dough very sticky so wrapped it in cling film for 30 mins and it was better. I cheated, and rolled them using the low carb flour. Kept them wrapped in cling film and warmed in the microwave.
This recipe is definitely easier than others I have used for low carb wraps so will become my norm!
