Ingredients
- 1 large Cauliflower
- 100 g Cream cheese
- 150 ml Double cream
- 160 g Extra mature cheddar (grated)
- 40 g Lightly salted butter
- 1 tsp Garlic powder
- 1 tsp Dijon mustard
- Salt & pepper (to taste)
Instructions
- Pre-heat your oven to 180°C (fan).
- Grease a baking dish with butter and add the cauliflower florets.
- Mix the cream cheese, double cream, butter, salt, pepper, garlic powder and mustard.
- Once combined, pour the mixture over the cauliflower florets.
- Top with the shredded cheddar.
- Bake in the oven for 40 minutes, or until the cauliflower is fork-tender and the top is golden brown.

It was delicious the only negative comment I would make is that I would par boil the cauliflower first. When cooked for 45 minutes the cauliflower was still slightly crisp but I like my veg well cooked.
Loved this cauliflower cheese, really tasty. Par boiled the florets first so there was less cooking time and then cooked in the air fryer. I did sprinkle a tiny amount of panko breadcrumbs on the top with the cheese and this gave a lovely golden, crunchy topping. Delicious
Lovely. Made enough for a side dish with mascarpone, and used a splash of milk as didn’t have cream. Added lots of mature cheddar. I par boiled the cauliflower and just topped it off with more grated cheddar before oven baking for 15 mins. Will definitely do this again, so much easier than a roux-based sauce and far more delicious and velvety! Thank you from somebody new to a low carb diet.
