Low-Carb Cheese Pastries
A brilliant alternative for creating your own quiche or pie base and adding a lovely biscuity bite!

- 250 g low-carb flour
- ½ tsp salt
- 2 tsp cream of tartar
- 1 tsp bicarbonate of soda
- 60 g butter
- 50 g grated cheddar cheese
- 60 ml milk or a milk alternative (coconut, almond etc)
Preheat your oven to 200°C.
Put the flour, salt, cream of tartar and butter into a mixer (or rub together with your fingertips!) until a sand-type texture is achieved.
Add in the grated cheddar cheese.
Mix together and add a dash of milk (or a milk alternative). Keep adding a dash at a time until it all comes together. Optionally, add a dash of cream.
There's no need to roll it out. Squash it down using your hands to around 4cm thick and use a round cutter. It should make about 10 rounds.
If you are using it as a pie base, press into a pie dish.
Brush them with egg then sprinkle some more cheese on top before baking at 200°C for 15 minutes.
