Low-Carb Cheese Pastries

A brilliant alternative for creating your own quiche or pie base and adding a lovely biscuity bite!

Ingredients
  

  • 250 g low-carb flour
  • ½ tsp salt
  • 2 tsp cream of tartar
  • 1 tsp bicarbonate of soda
  • 60 g butter
  • 50 g grated cheddar cheese
  • 60 ml milk or a milk alternative (coconut, almond etc)

Instructions
 

  • Preheat your oven to 200°C.
  • Put the flour, salt, cream of tartar and butter into a mixer (or rub together with your fingertips!) until a sand-type texture is achieved.
  • Add in the grated cheddar cheese.
  • Mix together and add a dash of milk (or a milk alternative). Keep adding a dash at a time until it all comes together. Optionally, add a dash of cream.
  • There's no need to roll it out. Squash it down using your hands to around 4cm thick and use a round cutter. It should make about 10 rounds.
  • If you are using it as a pie base, press into a pie dish.
  • Brush them with egg then sprinkle some more cheese on top before baking at 200°C for 15 minutes.
