Keto Pasta Carbonara

Ingredients  

  • 150 g Bacon
  • 60 g Boneless chicken thighs
  • 250 g Double cream
  • 3 tbsp Parmesan cheese
  • 1 Egg yolk Large
  • 2 Eggs Medium
  • 40 g Low-carb pasta flour

Instructions
 

  • Make the pasta following our pasta recipe linked in the notes below. Follow the steps down to step number 7.
  • Dice the bacon, and cook in a frying pan until the outside browns. Remove from the pan.
  • Dice the chicken and cook until it browns and is cooked all the way through. Remove from the pan.
  • In a small bowl, mix the egg yolk and 2 tbsp of the parmesan cheese together until it forms a paste.
  • Place your fryingpan back on medium heat, add 1/2 the total amount of cream and mix the parmesan and egg pasta into the cream. This will take some mixing.
  • Eventually, add the remaining cream, chicken and bacon. Continue stirring.
  • Put a pan of water on to boil, and add a splash of olive oil or butter.
  • Once the water is boiling, add your pasta. The pasta is ready once it floats. This happens very quickly!
  • Drain the pasta, and mix it in with your carbonara sauce.
  • Serve with some grated parmesan cheese on top!

  • Looking for the perfect side? Mix some butter and garlic together, slice the low-carb sandwich baguette halfway down, stuff it with your garlic butter, and sprinkle some grated cheese on top. Place in the oven just until the butter and cheese have melted.
