Ingredients
- 2 Eggs
- 120 g Double cream
- 30 g Arrowroot
- 1/2 tsp Salt
- Coconut Oil or Duck Fat
Instructions
- Mix all the ingredients except the fat in a blender. Let the mix stand for 30 minutes.
- Place 1/2 tsp of duck fat or coconut oil in each hole of the silicone mould.
- Place the silicone mould with the fat in a preheated oven at 195°C until the fat has melted.
- Use a scoop to evenly distribute your mixture into the silicone mould—about 20ml in each.
- Place back in the oven for 15+ minutes until they have risen. Don't open the door early, as this will prevent them from rising and becoming fluffy.

Could I use xantham gum instead of arrowroot?
Hi Kim, we wouldn’t recommend it. While Xantham gives a glue-like texture, the arrowroot it what makes it rise. But if you try it, please let us know how you get on!
Arrowroot has 88g of carbs per 100g
30g of arrowroot is 26.4g of carbs divided by 18 servings is 1.46g per pudding? How do you come up with 0.4 carb per pudding ? I did make them today and they are absolutely fabulous thanks
Hi Columbo! We took the nutritional information for arrowroot from FoodData Central, however, we have now gone back and revised using “McCance Widdowsons Composition of Foods”, which brings the total carb count up.
I LOVE this recipe, which I have tried half a dozen times. The end result is always delicious, but I can’t get my Yorkshires to stay risen. They look majestic and puffy until I pull them out of the oven, where they immediately sink into little flat, slightly doughy pancakes. I have tried cooking them hotter, and I have tried cooking them longer, but I have had the same result each time. Does anyone have any suggestions?
Hi Pipmo 👋 This certainly is one of our go-to recipes! 😋 Hmm… This isn’t an issue that we’ve encountered. But have you tried to leave your batter to rest for about 30 minutes before you cook? Also, make sure that the oven is nice and hot before adding the tray. It could also be that they cool too quickly, so maybe try leaving them in the oven, but turning it off and opening the door slightly for 15 min, before taking them out? Let us know how you get on!
Have you a recipe to make Yorkshire Puddings using your low carb flour?
I think I will try a fairly eggy recipe and substitute normal flour for this.
Hi. Does it matter which coconut fat you use, runny or solid? (Solid melted before use)
Hi Julie, I shouldn’t think it would matter what brand of coconut fat. It should be solid when placed in the moulds, and will melt once its in the oven 🙂
