Keto Pasta Lasagne

Requested by so many since we launched our pasta flour — the keto pasta lasagne! We know you can use Edam sheets, but why would you when you can get it with pasta at only 9g carbs per portion?!

Ingredients  

  • 1 kg Minced beef
  • 3 Celery stalks
  • 1 tin Tomatoes
  • 2 Onions (finely chopped)
  • 1 carton Passata
  • 1 square 100% dark chocolate
  • 2 Eggs
  • 40 g Low-Carb pasta flour
  • 200 g Double cream
  • 200 g Cream cheese
  • 200 g Grated cheddar
  • 1 pinch Nutmeg
  • 2 cloves Garlic

Instructions
 

Pasta sheets

  • Use the flour to create a small well on your worktop. Crack the eggs into the well and start mixing with a fork.
  • As the dough starts to stiffen, use your hands to knead as much as possible until you have a ball of firm dough.
  • Wrap in cling film and let rest in the fridge for at least one hour, preferably longer.
  • Remove the dough from the fridge, roll it out and cut into sheets.
  • Place the pasta sheets in a flat dish with boiling water to par boil.

Lasagne

  • Fry the mince and garlic in a deep frying pan.
  • Once the mince browns, scoop it out and add the chopped celery and onions to the juices to soak up any fat. Fry until cooked through.
  • Put the mince back in the pan and add the tomatoes, passata and taste with salt and pepper.
  • Add the chocolate and let it melt through the mixture and allow to thicken.
  • Put the cream, cream cheese and nutmeg in a jug and whip it up thoroughly to make a thick "bechmel" style sauce.
  • Layer mince, pasta, and creamy sauce as much as you can and top the lasagne with a layer of grated cheddar.
  • Bake in the middle of the oven for 45 minutes on 180°C.

Notes

To make the dish go even further, why not add some grated cheddar into the cheese sauce, and some chopped mushrooms in with the onions and celery?
