Ingredients
- 1 egg
- 1 egg yolk
- 1 tbsp erythritol or other sweetener
- 1½ tbsp olive oil
- 1 tbsp butter melted
- ½ tsp vanilla extract
- 45 g low-carb flour
- 25 g milled linseed
- ¼ tsp salt
- ½ tsp baking powder
- 2 - 6 tbsp almond milk
Instructions
- Add the egg yolk and egg into a bowl with the sweetener.
- Whisk until light in colour and fluffy.
- In another bowl, whisk the melted butter, olive oil and vanilla extract together.
- Add the wet ingredients together and whisk.
- Fold the dry ingredients into the wet ingredients and add the almond milk 2 tbsp at a time until desired consistency is achieved.
- Immediately add a ladle full (or large tbsp) of the mixture to a warm pan and cook gently for about 3 minutes. Flip and cook on the other side for 2-3 minutes or until lightly browned.
- The pancakes are cooked when they are spongy to the touch! More milk may be required to loosen the mixture for the second serving.
Notes
- These pancakes are great if toasted later on. It works well to cook a batch and reheat at a later time!

Following the recipe as given I found that the initial mix was far too thick and it needed a lot more milk to loosen it to a consistency which was suitable for pancakes. But once I had done that, the taste and texture were really good – the best low-carb pancakes I have found so far! (I knocked one star off the rating because of how much more milk was needed, otherwise it would have had five stars.)
As already noted in the other comment, the amount of milk given in the recipe is way off: trying to adjust the milk resulted in my pancakes being a complete disaster…
I am sorry to give such a low star rating, but quantities are extremely important in a recipe like this one.

I have tried 2x to make panckaes from your websitem i used exact amount of ingredients add more milk than what is advised as were way to think however still nope came out. Impossible to turn over. Complete disaster. Im sorry to leave such a bad comment but it very upseting that this doesnt work
Hi Kaz, I am sorry to hear that, as this is one of our go-to recipes. The recipe lends itself better to a smaller pancake like a scotch pancake, so perhaps your issues came from doing a larger pancake?
Would love to cook these for all the family, but unfortunately nana can’t have linseed because of a medication she takes, is there another product we could use instead please
